Oatmeal Soda Bread

Description

This is a very easy recipe that has the added bonus of being lowfat! It bakes into a round loaf.

Ingredients

  • 3 ½ cups all-purpose flour
  • ½ cup quick cooking oats
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 (8 ounce) container low-fat sour cream
  • ¾ cup skim milk
  • 2 tablespoons honey
  • 1 tablespoon white sugar
  • ¼ cup butter, melted
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl
  3. mix together flour
  4. 1/2 cup oats
  5. salt
  6. baking powder
  7. and baking soda.
  8. In another bowl
  9. mix together sour cream
  10. milk
  11. honey
  12. and sugar. Add to the flour mixture
  13. and mix just until well blended. Stir in melted butter or margarine.
  14. Turn dough onto a lightly sprayed baking sheet. Shape into a round
  15. lightly mounded circle
  16. about 8 inches diameter. Brush the top of the loaf with melted butter or margarine
  17. and sprinkle with remaining 1 tablespoon oats. With a knife
  18. score the top of the loaf into quarters.
  19. Bake for about 40 minutes
  20. or until browned. Cool completely before slicing.
