Pumpkin-Banana-Applesauce Bread

Description

A wholesome version of pumpkin-banana bread that can be made into muffins or bread loaves, or a combination of both.

Ingredients

  • 4 ½ cups whole wheat flour
  • 1 cup white sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons ground cinnamon
  • 1 ½ teaspoons ground nutmeg
  • 1 ½ teaspoons ground cloves
  • 3 cups pumpkin puree
  • 1 ½ cups unsweetened applesauce
  • 3 eggs
  • 2 medium bananas, mashed

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease three 9×5-inch loaf pans.
  2. Mix flour
  3. sugar
  4. baking powder
  5. baking soda
  6. salt
  7. cinnamon
  8. nutmeg
  9. and cloves together in a large bowl. Mix pumpkin puree
  10. applesauce
  11. eggs
  12. and bananas together in another bowl. Add pumpkin mixture to the flour mixture
  13. mixing until well blended. Pour batter evenly into the prepared loaf pans.
  14. Bake in the preheated oven until a toothpick inserted into the center comes out clean
  15. 45 to 60 minutes.
