Zuppa Toscana

Description

Italian Tuscan sausage soup.

Ingredients

  • 1 (16 ounce) package smoked sausage
  • 2 potatoes, cut into 1/4-inch slices
  • ¾ cup chopped onion
  • 6 slices bacon
  • 1 ½ teaspoons minced garlic
  • 2 cups kale – washed, dried, and shredded
  • 2 tablespoons chicken bouillon powder
  • 1 quart water
  • ⅓ cup heavy whipping cream

Instructions

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Arrange sausage links onto a baking sheet; bake in the preheated oven for 25 minutes
  3. or until cooked through. Cut in half lengthwise
  4. then cut at an angle into 1/2-inch slices.
  5. Place onions and bacon in a large saucepan; cook and stir over medium heat until bacon is crispy and onions are tender. Remove bacon and crumble; set aside.
  6. Add garlic; cook for 1 minute. Add bouillon powder
  7. water
  8. and potatoes; simmer for 15 minutes.
  9. Add crumbled bacon
  10. sausage
  11. kale
  12. and cream. Simmer for 4 minutes and serve.
