Babka III

Description

Babka is a rich yeast-raised cake bread. A successful babka, the pride of every Polish/Ukrainian homemaker, is rich, tender, fine-textured, and very light. Traditionally, this bread is baked in tall round baking pans. Coffee cans can be lined with baking parchment and used instead.

Ingredients

  • 1 cup milk
  • ⅓ cup all-purpose flour
  • 2 ½ (.25 ounce) packages active dry yeast
  • 3 teaspoons white sugar
  • ½ cup warm water (110 degrees F/45 degrees C)
  • 2 eggs
  • 10 egg yolks
  • ¾ cup butter, melted
  • 2 teaspoons vanilla extract
  • 2 teaspoons lemon zest
  • 5 cups all-purpose flour
  • ¾ cup raisins
  • 1 egg
  • 2 tablespoons water
