Molasses Raisin Muffins

These healthy, moist, and delicious Molasses Raisin Muffins are a perfect way to start each morning.

Ingredients

  • 2 cups plain yogurt
  • 1 egg, beaten
  • ⅓ cup molasses
  • 1 cup raisins
  • ½ cup wheat germ
  • 1 cup quick cooking oats
  • 3 tablespoons butter, melted
  • 1 ½ cups whole wheat flour
  • 1 ¼ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups.
  2. Beat together the yogurt
  3. egg
  4. molasses
  5. raisins
  6. wheat germ
  7. oats
  8. and butter in a large bowl until evenly mixed. Sift the flour
  9. baking soda
  10. cinnamon
  11. ginger
  12. cloves
  13. and salt on top of the molasses mixture. Fold the flour mixture into the molasses until a batter has formed. Pour batter into muffin cups
  14. filling to the top.
  15. Bake in preheated oven until a toothpick inserted into the middle of a muffin comes out clean
  16. about 25 minutes.
