Bright Day Banana Muffins

Description

Low-fat, low-cholesterol, high fiber, and they taste great!

Ingredients

  • 4 bananas
  • 1 cup brown sugar
  • 2 egg whites
  • 1 egg
  • 3 tablespoons canola oil
  • 1 ¼ cups whole wheat flour
  • 1 cup rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 12 paper muffin cup liners

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.
  2. Mash bananas in a bowl until no lumps remain. Add brown sugar
  3. egg whites
  4. egg
  5. and canola oil; mix thoroughly. Stir flour
  6. oats
  7. baking soda
  8. salt
  9. and baking powder into the batter until just combined.
  10. Fill muffin cup 2/3-full with batter.
  11. Bake in the preheated oven until tops spring back when lightly pressed
  12. 20 to 25 minutes.
