Ten Bean Soup I

Description

A hearty bean soup.

Ingredients

  • 1 (16 ounce) package dry mixed beans
  • 4 slices bacon
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 3 stalks celery, chopped
  • salt to taste
  • ground black pepper to taste

Instructions

  1. Soak beans in water overnight.
  2. Fry bacon in a medium skillet over medium heat until partially cooked
  3. then add onion
  4. garlic
  5. and celery. Cook until onion is tender
  6. 3 to 4 minutes. Remove from heat.
  7. Place drained beans in a large pot. Add water to cover beans. Add bacon mixture to the pot.
  8. Cook at a low boil until beans are tender
  9. about 1 1/2 hours. Season with salt and pepper.

Total Time: 9 hrs 50 mins
