Strawberry-Blueberry Muffins

Description

Moist yummy muffins. I shared with all my neighbors!

Ingredients

  • ½ cup vegetable oil
  • 1 cup milk
  • 2 eggs
  • 3 ½ cups all-purpose flour
  • 1 cup white sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup chopped strawberries
  • 1 cup blueberries
  • 2 tablespoons strawberry jam

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffins cups or line with paper liners.
  2. Whisk oil
  3. milk
  4. and eggs together in a bowl. Combine flour
  5. sugar
  6. baking powder
  7. and salt together in a separate bowl; fold in strawberries
  8. blueberries
  9. and jam. Stir milk mixture into flour mixture until just combined. Fill muffin cups with batter.
  10. Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean
  11. about 25 minutes. Cool in the muffin tin for 10 minutes before removing to cool completely on a wire rack.
