This is a long-standing favorite recipe evolved to suit the slow cooker and minimal messing around. Chop vegetables, brown meat, throw it all in, and walk away.
Ingredients
- 3 pounds ground beef
- 2 (14.5 ounce) cans diced tomatoes, or more to taste
- 2 (6 ounce) cans tomato paste
- ΒΌ cup chili powder
- 2 tablespoons dried oregano
- 2 tablespoons ground cumin
- 1 tablespoon chipotle pepper powder
- 1 tablespoon cayenne pepper
- 3 (14.5 ounce) cans kidney beans, rinsed and drained
- 4 cups chopped onions
- 4 cups chopped bell peppers
- 3 jalapeno peppers, chopped
- 2 cloves garlic, minced, or more to taste
