Easy and Delicious Pumpkin Bread

Moist, delicious pumpkin bread that is the best I have ever eaten.

Ingredients

  • 5 eggs
  • 1 ¼ cups vegetable oil
  • 1 (15 ounce) can pumpkin puree
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 2 (3 ounce) packages cook-and-serve vanilla pudding mix
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease 2 8×4-inch loaf pans.
  2. Whisk eggs in a large bowl. Add vegetable oil and pumpkin puree; whisk until smooth.
  3. Mix flour

  5. vanilla pudding mix
  6. baking soda
  7. cinnamon
  8. and salt in a separate bowl; stir into pumpkin mixture. Pour batter into the 2 prepared loaf pans.
  9. Bake in the preheated oven until a toothpick inserted in the center of each loaf comes out clean
  10. 75 to 80 minutes.
