Banana Date Flaxseed Bread

Description

I’m always searching for healthy recipes, and this one filled the bill. The flaxseeds give the bread a really nutty taste.

Ingredients

  • ½ cup flax seed
  • 3 bananas, mashed
  • ¼ cup vegetable oil
  • ½ cup white sugar
  • 2 eggs
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup flax seed
  • ½ cup chopped pitted dates

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 8×4-inch loaf pan.
  2. Grind 1/2 cup flax seed in an electric coffee grinder or food processor; set aside.

  6. and eggs in a large bowl. Mix together flour
  7. baking powder
  8. baking soda
  9. salt
  10. ground flax seed
  11. and 1/4 cup whole flax seed in a separate bowl. Gradually stir flour mixture into banana mixture. Fold in dates. Spoon batter into the prepared loaf pan.
  12. Bake in the preheated oven until a toothpick inserted into the loaf comes out clean
  13. 55 to 60 minutes.
