Description
This simple recipe goes great with chicken, pork or steak.
Ingredients
- 7 large potatoes, peeled and cubed
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 1 cup sour cream
- ¼ cup butter
- 2 tablespoons chopped green onions
- 2 teaspoons salt
- ¼ teaspoon black pepper
- 1 cup shredded Cheddar cheese
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish.
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender
- about 15 minutes. Drain and mash.
- Combine mashed potatoes
- spinach
- sour cream
- butter
- green onions
- salt
- and pepper in a large bowl. Spoon into the prepared dish.
- Bake in the preheated oven for 15 minutes. Top with cheese and continue baking until cheese is melted
- about 5 more minutes.
