Caribbean Jerk Pork Chops

Description

Caribbean-style pork chops marinated overnight in a lemon juice and oil marinade with a variety of spices. Use more cayenne pepper to make it really hot!

Ingredients

  • ¾ cup water
  • ⅓ cup lemon juice
  • ⅓ cup chopped onion
  • 1 tablespoon packed brown sugar
  • 1 tablespoon chopped green onion
  • 1 tablespoon canola oil
  • ¾ teaspoon salt
  • ¾ teaspoon ground allspice
  • ¾ teaspoon ground cinnamon
  • ¾ teaspoon ground black pepper
  • ½ teaspoon dried thyme, crushed
  • ¼ teaspoon cayenne pepper, or to taste
  • 6 raw chop with refuse, 113 g
  • (blank) 4 ounces lean pork chops, 1/2 inch thick

Instructions

  1. Combine water
  2. lemon juice
  3. onion
  4. brown sugar
  5. green onions
  6. oil
  7. salt
  8. allspice
  9. cinnamon
  10. black pepper
  11. thyme
  12. and cayenne pepper in a blender or food processor. Blend until smooth. Reserve 1/2 cup for basting.
  13. Place pork chops in shallow glass dish. Pour remaining marinade over the meat. Cover
  14. and refrigerate at least 12 hours
  15. but no longer than 24 hours.
  16. Preheat grill for medium heat. Place grate 4 to 5 inches above heat source.
  17. Oil the grill grate. Arrange chops on grate
  18. and discard marinade. Cover grill
  19. and cook chops for 10 minutes
  20. turning once
  21. or to desired doneness.
