Salad with Artichokes

Description

This was given to me by a friend, who got it from a little pasta house restaurant in her hometown. It calls for mixed greens, red onion and artichokes with a vinegar and oil dressing.

Ingredients

  • 4 cups mixed salad greens
  • ½ red onion, sliced
  • 1 (14 ounce) can artichoke hearts in water, drained
  • ½ cup vegetable oil
  • ½ cup red wine vinegar
  • 1 teaspoon seasoned salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 3 tablespoons grated Parmesan cheese

Instructions

  1. Combine mixed greens
  2. artichoke hearts
  3. and onion in a large bowl.
  4. Whisk oil
  5. vinegar
  6. seasoned salt
  7. garlic powder
  8. and pepper together in a separate bowl. Pour desired amount of dressing over the salad
  9. and toss to coat.
  10. Sprinkle with grated Parmesan cheese
  11. and serve.
