Quick and Easy Thai Style Coleslaw

This recipe is incredibly easy. A coleslaw with a sweet and tangy blend of Asian flavors. Takes about 5 minutes to make! Make it early in the afternoon, and it will be a great with dinner. Refreshing and delicious – an ideal summer side dish!

Ingredients

  • 1 (16 ounce) package shredded coleslaw mix
  • ¼ cup lime juice
  • ¼ cup rice wine vinegar
  • 1 tablespoon fish sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • ¼ cup chopped peanuts
  • salt and pepper to taste

Instructions

  1. Pour the coleslaw mix into a large bowl. Pour in the lime juice
  2. rice vinegar
  3. fish sauce
  4. sesame oil
  5. honey
  6. and peanuts. Stir until well blended. If you have a bowl with a lid
  7. put the lid on and shake thoroughly. Taste
  8. and season with salt and pepper. Refrigerate for a few hours
  9. stirring or shaking occasionally
  10. to allow the flavors to blend before serving.
