Yellow Rice with Vegetables

Description

Spanish yellow rice with fresh veggies that everyone loves.

Ingredients

  • 1 teaspoon vegetable oil
  • 1 small onion, chopped
  • 1 carrot, diced
  • ½ cup chopped broccoli florets
  • ¼ cup diced red bell pepper
  • 1 clove garlic, minced
  • 3 cups vegetable broth
  • 1 ½ cups rice
  • 1 (1.41 ounce) package sazon seasoning with coriander and achiote (such as Goya®)
  • 1 dash adobo seasoning with pepper (such as Goya®)

Instructions

  1. Heat oil in a saucepan over medium heat. Add onion
  2. carrot
  3. broccoli
  4. bell pepper
  5. and garlic; cook and stir until vegetables soften and garlic just begins to brown
  6. about 5 minutes.
  7. Stir in broth
  8. rice
  9. sazon seasoning
  10. and adobo seasoning; bring to a boil. Reduce the heat to low and cook until liquid is absorbed and rice is tender
  11. about 25 minutes.
  12. Fluff rice with a fork to serve.

Cook Time: 30 mins

Total Time: 45 mins
