Day Before Mashed Potatoes

This recipe helps you plan ahead by allowing you to make your mashed potatoes in advance!

Ingredients

  • 9 potatoes, peeled and cubed
  • 6 ounces cream cheese
  • 1 cup sour cream
  • 2 teaspoons onion powder
  • 1 teaspoon salt
  • ΒΌ teaspoon ground black pepper
  • 2 tablespoons butter

Instructions

  1. Bring a large pot of salted water to a boil. Drop in potatoes
  2. and cook until tender but still firm
  3. about 15 minutes.
  4. Transfer potatoes to a large bowl
  5. and mash until smooth. Mix in the cream cheese
  6. sour cream
  7. onion powder
  8. salt
  9. pepper and butter. Cover
  10. and refrigerate 8 hours
  11. or overnight.
  12. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  13. Spread potato mixture into the prepared baking dish
  14. and bake in the preheated oven about 30 minutes.
