Bearnaise Sauce II

Description

This deliciously creamy herb sauce is so simple to make using a microwave, but if you do not have one, place your bowl over a pan of simmering water to heat it gently. Excellent German recipe for Bernaise sauce. Great on steaks, chicken, vegetables and fish.

Ingredients

  • ¼ cup butter
  • 1 teaspoon minced onion
  • 1 tablespoon white wine vinegar
  • 2 egg yolks, beaten
  • 2 tablespoons heavy cream
  • 1 ½ teaspoons lemon juice
  • 1 teaspoon dried tarragon
  • 1 teaspoon chopped fresh parsley
  • ¼ teaspoon salt
  • 1 pinch dry mustard
  • 1 pinch cayenne pepper

Instructions

  1. Place butter in a microwave-safe glass bowl. Cook in the microwave on high until melted
  2. about 30 seconds. Whisk in egg yolks
  3. heavy cream
  4. white wine vinegar
  5. lemon juice
  6. and onion. Season with tarragon
  7. parsley
  8. salt
  9. mustard powder
  10. and cayenne pepper; mix well.
  11. Continue cooking in the microwave
  12. stirring every 20 to 30 seconds
  13. until thickened
  14. about 1 1/2 minutes.
