Curry Chickpea Salad

Quick and easy chickpea salad – makes a great lunch option and gets better as it sits and marinates over a couple of days.

Ingredients

  • 6 tablespoons water
  • 1 tablespoon olive oil
  • 1 teaspoon honey, or to taste
  • 1 teaspoon curry powder, or to taste
  • 1 dash salt
  • 1 dash ground black pepper
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 medium red bell pepper, chopped
  • 1 medium orange bell pepper, chopped
  • 1 medium yellow bell pepper, chopped
  • ΒΌ cup raisins
