Very tasty salad – people always gobble this one up! This recipe can be modified based on your preference and liking of ginger and garlic.

Ingredients

  • 1 red onion, chopped
  • 1 orange bell pepper, chopped
  • cooking spray
  • ¼ cup olive oil, divided
  • 1 teaspoon minced garlic, or to taste
  • 1 teaspoon minced fresh ginger, or to taste
  • 2 pears, cut into bite-size chunks
  • ¼ cup ponzu sauce (citrus soy-based sauce), divided
  • 1 (12 ounce) bag mixed salad greens, or to taste
  • 1 cucumber, chopped
