Chipotle Rice and Beans

Description

This Mexican-style dish gets a jolt of smoky flavor from chipotle salsa.

Ingredients

  • 2 cups water
  • ½ teaspoon salt
  • 1 cup Safeway medium-grain rice
  • 1 (15 ounce) can O Organics Black Beans, drained and rinsed
  • 1 cup Safeway SELECT Chipotle Salsa
  • 4 ounces O Organics Jack Cheese, shredded
  • 1 tablespoon Lucerne® Light Sour Cream
  • 1 firm-ripe avocado, sliced

Instructions

  1. In a 2- to 3-quart pan
  2. combine water and salt; bring to a boil over high heat. Add rice
  3. cover pan
  4. reduce heat
  5. and simmer until water is absorbed and rice is tender to bite
  6. about 20 minutes.
  7. When rice is done
  8. stir in black beans
  9. salsa
  10. and cheese until well mixed. Spoon into bowls and top with sour cream and sliced avocado
  11. if desired.
