Turkey Sloppy Joes

Description

Made with turkey, veggies, and whole wheat burger buns, this adaptation offers a healthier take on a retro favorite.

Ingredients

  • 1 tablespoon O Organics Extra Virgin Olive Oil
  • 1 large carrot, diced
  • 1 large onion, diced
  • 12 ounces cooked turkey, diced
  • 6 ounces cremini (brown) mushrooms, diced or cut into small wedges
  • 4 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 (14.5 ounce) can Safeway No Salt Added Diced Peeled Tomatoes (with liquid)
  • 1 cup Safeway Chicken Broth
  • ⅓ cup Safeway Ketchup
  • ½ teaspoon soy sauce
  • 4 each Safeway Premium Wheat Hamburger Buns
  • 1 tablespoon cornstarch dissolved in
  • 2 tablespoons cold water
  • ¼ cup shaved, grated, or shredded Parmesan cheese

Instructions

  1. In a large skillet over medium high heat
  2. warm olive oil. Add carrot and cook
  3. stirring occasionally
  4. for 2 minutes. Add onion and cook
  5. stirring occasionally
  6. for 2 minutes. Add turkey
  7. mushroom
  8. chili powder
  9. garlic powder
  10. salt
  11. and pepper and cook
  12. stirring occasionally
  13. for 4 minutes. Stir in tomatoes
  14. chicken broth
  15. ketchup
  16. and soy sauce
  17. increase the heat to high
  18. and bring to a boil. Reduce to a simmer and cook
  19. stirring occasionally
  20. for 20 minutes.
  21. Meanwhile
  22. preheat a broiler. Position a broiler pan 3 to 4 in. from heating element. Split buns and place open-faced on broiler pan. Toast the buns until lightly browned
  23. 2 to 3 minutes.
  24. Add cornstarch mixture to Sloppy Joe mixture
  25. stirring until sauce thickens
  26. 30 to 60 seconds.
  27. To serve
  28. place two bun halves on each plate
  29. open faced. Top buns with Sloppy Joe mixture
  30. dividing evenly. Sprinkle with Parmesan cheese
  31. if using
  32. and serve.
