Green Apple and Macadamia Quinoa

Description

Low-fat, so filling, and tasty! I double this recipe at the beginning of the week and it provides enough grab-and-go lunches for me and my husband for several days in the week.

Ingredients

  • 2 cups water
  • 1 cup quinoa
  • ½ cup macadamia nuts
  • 1 cup diced green apple
  • ¾ cup seeded and diced cucumber
  • ½ cup diced green bell pepper
  • ¼ cup diced celery
  • lemon, juiced
  • 1 green onion, thinly sliced
  • 1 clove garlic, minced
  • 1 teaspoon agave nectar, or to taste
  • ¾ teaspoon flaked salt

Prep Time: 15 mins

Cook Time: 20 mins

Total Time: 35 mins
