Rich Vegetable Chowder

Description

This is very rich and easily doubled.

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon dried basil
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon salt
  • 1 cup chicken broth
  • 1 cup cubed potato
  • ½ cup chopped carrot
  • ¼ cup sliced green onions
  • 1 cup half-and-half
  • ¾ cup frozen corn, thawed

Instructions

  1. Melt butter in a saucepan over medium heat; stir flour
  2. basil
  3. pepper
  4. and salt into butter and pour in chicken broth. Cook and stir broth mixture until thickened and boiling
  5. 5 to 7 minutes. Stir potato
  6. carrot
  7. and green onions into broth mixture; bring to a boil. Reduce heat and simmer until potatoes are mostly tender
  8. 10 to 15 minutes.
  9. Stir half-and-half and corn into broth mixture; cook and stir until chowder is heated through
  10. about 5 more minutes.

Cook Time: 20 mins

Total Time: 35 mins
