A salad for kale lovers and haters. Leftovers hold up well for about a day.
Ingredients
- 1 bunch curly kale, stemmed and leaves shredded
- 1 tablespoon olive oil, or as needed
- ¼ teaspoon kosher salt, or as desired
- 2 cloves garlic, peeled
- ¼ teaspoon kosher salt

- 2 cups walnut pieces
- 1 lemon, juiced
- 2 cups cooked wild rice
- 2 apples (such as Gala or Pink Lady), diced
- 1 cup dried cranberries
- ½ cup shredded Italian cheese blend (such as Trader Joe’s® 4-Cheese Romano Blend)
- ¼ cup sesame seeds
- ¼ cup chia seeds
- ¼ cup hemp seeds
- ¼ cup flax seeds
- 2 tablespoons bread crumbs
- 2 tablespoons crumbled blue cheese, or to taste (Optional)
