This is a variation on the popular farro chicken salad and is loaded with protein and healthy carbs.

Ingredients

  • 2 cups water
  • 1 cup uncooked quinoa
  • 3 cups chopped cooked chicken
  • 3 Granny Smith apples, cut into 1-inch slices
  • 1 (8 ounce) package mozzarella cheese, cubed
  • 2 tablespoons dried parsley
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ cup raspberry vinaigrette dressing
