Adapted a recipe that I watched my uncle make. Delicious served either warm or at room temperature. Perfect for those people who don’t like mayo.
Ingredients
- 1 tablespoon olive oil, or as needed
- 10 small red potatoes, or to taste
- 4 small baby eggplants, cut into 1-inch pieces
- 3 canned roasted red bell pepper slices, drained and chopped (Optional)
- 2 green bell peppers, cut into 1-inch pieces
- 1 red onion, cut into large chunks
- 2 cloves cloves garlic, quartered
- 1 tablespoon olive oil, or to taste
- ½ cup olive oil
- 1 teaspoon garlic salt
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ tablespoon coarsely ground black pepper
