Warm Italian Potato Salad

Description

Adapted a recipe that I watched my uncle make. Delicious served either warm or at room temperature. Perfect for those people who don’t like mayo.

Ingredients

  • 1 tablespoon olive oil, or as needed
  • 10 small red potatoes, or to taste
  • 4 small baby eggplants, cut into 1-inch pieces
  • 3 canned roasted red bell pepper slices, drained and chopped (Optional)
  • 2 green bell peppers, cut into 1-inch pieces
  • 1 red onion, cut into large chunks
  • 2 cloves cloves garlic, quartered
  • 1 tablespoon olive oil, or to taste
  • ½ cup olive oil
  • 1 teaspoon garlic salt
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ tablespoon coarsely ground black pepper

Prep Time: 20 mins

Cook Time: 45 mins

Total Time: 1 hr 15 mins
