Fresh Thai Spring Rolls

Description

A fresh spring roll that is low in calories and guilt. It is full of fresh ingredients. It is a little time consuming to prepare but the raves you receive from your guests will make it all worth it.

Ingredients

  • 1 red bell pepper, cut into matchsticks
  • ½ mango, cut into matchsticks
  • 1 large carrot, peeled and cut into matchsticks
  • 4 green onions (white parts only), cut into matchsticks
  • 1 tablespoon minced cilantro
  • ½ cup cashew butter
  • ¼ cup sesame oil
  • 1 tablespoon grated fresh ginger
  • ½ teaspoon minced garlic
  • ½ teaspoon minced dried Thai chile peppers
  • 16 rice paper sheets
