If you want something different and very pretty, try this. Layers of non-sweet cheesecake filled with colorful sliced veggies and served with a flavorful cucumber sauce. I have made this many times over the years and substituted lots of different veggies. They all work well. It’s perfect for a brunch buffet, or serve with a big green salad.
Ingredients
- 1 ½ cups cracker crumbs
- ½ cup butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 2 eggs
- 8 ounces sour cream
- ⅓ cup all-purpose flour
- ½ cup minced onion
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 cup shredded carrots
- 1 cup chopped broccoli
- 1 cup diced red bell pepper
- 1 (8 ounce) container plain yogurt
- ⅓ cup mayonnaise
- ¾ cup peeled and chopped cucumber, divided
- ½ teaspoon dried dill weed
- ½ teaspoon salt
