Enoki Mushrooms

Description

A very quick, tasty side dish that pairs well with an Asian-themed meal. They would also be great topped with a stir-fry.

Ingredients

  • 8 ounces enoki mushrooms
  • 1 teaspoon sesame oil
  • 1 large clove garlic, finely chopped
  • 1 teaspoon low-sodium soy sauce (such as Bragg®)
  • ½ teaspoon finely grated fresh ginger

Instructions

  1. Cut the bottom 2 inches off mushrooms and discard. Separate mushroom strands gently.
  2. Heat oil in a medium-sized nonstick skillet over medium heat. Add garlic and cook until just fragrant
  3. about 1 minute. Add mushrooms; cook and stir until they begin to wilt
  4. about 2 minutes. Add soy sauce and ginger; toss to coat. Cook 1 to 2 minutes more.
