BBQ Chicken Sloppy Joes

Description

These ground chicken Sloppy Joes are a healthier alternative to regular beef Sloppy Joes.

Ingredients

  • cooking spray
  • 2 pounds ground chicken
  • ½ cup chopped onion
  • ¼ cup chopped bell pepper
  • salt and ground black pepper to taste
  • ½ cup barbeque sauce
  • ½ cup ketchup
  • ¼ cup water, or more as needed
  • 2 tablespoons prepared yellow mustard
  • 8 (1.5 ounce) hamburger buns
  • 1 cup shredded Cheddar cheese
  • ¼ cup dill pickle slices, or to taste
  • ¼ cup sliced onion, or to taste

Instructions

  1. Spray a pan with cooking spray and heat over medium-high heat. Add chicken
  2. onion
  3. bell pepper
  4. salt
  5. and pepper. Cook and stir until chicken is no longer pink
  6. 5 to 7 minutes.
  7. Add barbeque sauce
  8. ketchup
  9. 1/4 cup water
  10. and mustard. Mix thoroughly and add more water if the mixture seems too thick. Reduce heat to low and simmer for 10 to 15 minutes.
  11. Serve on hamburger buns topped with Cheddar cheese
  12. pickle slices
  13. and sliced onion.
