Zippy Egg Salad

Description

Lime juice, soy sauce and Parmesan cheese turn an old classic into a zesty new salad. Best served on fresh sandwich bread with your favorite greens and fresh vegetables.

Ingredients

  • ¼ cup mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon light soy sauce
  • ¼ lime, juiced
  • 1 teaspoon crushed red pepper
  • salt and ground black pepper to taste
  • 4 hard-cooked eggs, chopped
  • 1 stalk celery, finely sliced

Instructions

  1. Whisk mayonnaise
  2. Parmesan cheese
  3. soy sauce
  4. lime juice
  5. red pepper
  6. salt
  7. and black pepper in a bowl.
  8. Stir eggs and celery into the mayonnaise mixture until well coated.
  9. Cover bowl with plastic wrap and refrigerate until chilled before serving.
