Millet Mung Bean Main Dish

Description

Delicious main dish featuring millet, mung beans, assorted vegetables, flavors and cheese. Yummy! My husband won a local cooking contest with a similar recipe.

Ingredients

  • 9 cups water, divided
  • 2 cups dried mung beans
  • 2 ½ cups millet
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 stalk celery, chopped
  • 1 carrot, shredded, or more to taste
  • ⅔ bunch chopped flat-leaf parsley
  • 2 cloves garlic, minced
  • 1 (1 inch) piece fresh ginger, grated
  • 2 teaspoons dried basil, or more to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • ½ teaspoon cayenne pepper
  • 2 cups chopped tomatoes
  • 2 teaspoons salt
  • ground black pepper to taste
  • 2 cups shredded sharp Cheddar cheese
