Description
This is one of my favorite chicken slider recipes.
Ingredients
- 1 tablespoon olive oil
- ½ cup diced onions
- 3 cloves garlic, chopped
- 1 (28 ounce) can whole peeled plum tomatoes, crushed by hand or mashed
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon fennel seeds
- ½ teaspoon dried thyme
- ¼ teaspoon red pepper flakes
- 4 skinless, boneless chicken breast halves
- 2 cups panko bread crumbs
- 3 eggs, beaten
- 1 cup all-purpose flour
- ⅓ cup grated Parmesan cheese
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon ground black pepper
- ¼ cup olive oil, or as needed
- salt as needed
- 1 cup shredded mozzarella cheese
- 16 slider buns
