Honeydew-Grape Tomato Salad

Description

This is a unique combination of fruit and vegetable items that makes a good side dish to a grilled meal. Make 4 to 48 hours ahead of use, and keep refrigerated until eating.

Ingredients

  • 3 honeydew melons – peeled, seeded and cubed
  • 3 pints grape tomatoes
  • 4 green bell peppers, seeded and cut into strips
  • 1 cup vegetable oil
  • ½ cup lemon juice
  • 1 tablespoon white sugar
  • 1 tablespoon dried basil
  • ¾ teaspoon ground black pepper

Instructions

  1. Combine the honeydew melon
  2. grape tomatoes
  3. and green bell peppers in a large bowl. Whisk together the vegetable oil
  4. lemon juice
  5. sugar
  6. basil
  7. and pepper in another bowl
  8. and pour over the honeydew mixture. Cover and refrigerate for at least 4 hours
  9. up to 48 hours
  10. before serving
  11. stirring occasionally.
