Description
This is my favorite kale salad. It is super nutrient-dense and loaded with healthy fats and lots of flavor. The technique of ‘massaging’ the kale is very important since it breaks it down, softens the texture, and makes it more palatable. Please take the time to remove the leaves from the stems. The stems are tough and very bitter. Use any kind of kale for this recipe.
Ingredients
- 1 bunch green kale, stemmed and leaves roughly chopped
- 1 bunch red kale, stemmed and leaves roughly chopped
- ½ cup chopped pecans
- ¼ cup apple cider vinegar
- 1 tablespoon honey
- 1 ½ teaspoons chipotle pepper powder
- 1 ½ teaspoons smoked paprika
- 1 teaspoon liquid amino acid (such as Bragg®)
- 1 avocado – peeled, pitted, and chopped
