Easy Lentil Feta Wraps

Description

Very tasty and very quick! My husband loves it, and I love that it takes only a few minutes to make! Use any or all of the ingredients, or whatever you have on hand! White wine may be substituted with heavy cream.

Ingredients

  • 6 (8 inch) whole wheat tortillas
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 shallots, finely chopped
  • ½ pound fresh mushrooms, sliced
  • ¼ cup dry white wine
  • 1 (15 ounce) can brown lentils
  • 1 (4 ounce) package feta cheese, crumbled
  • ¼ cup chopped kalamata olives
  • ½ cup chopped tomatoes

Instructions

  1. Preheat oven to 250 degrees F (120 degrees C). Wrap the tortillas in aluminum foil
  2. and warm in the oven about 10 minutes
  3. until soft.
  4. Heat the olive oil in a saucepan over medium heat
  5. and saute the garlic
  6. shallots
  7. and mushrooms 5 minutes
  8. until lightly browned. Pour in the wine
  9. and scrape up any browned bits from the bottom of the saucepan. Mix in the lentils
  10. and cook 2 minutes
  11. just until heated through.
  12. Fill each tortilla with a portion of the lentil mixture
  13. and fold or roll. Top with feta cheese
  14. olives
  15. and tomatoes.

Cook Time: 20 mins

Total Time: 35 mins
