Red Bean Stew

Description

This is a simple Lebanese dish that can be served as a side with pita bread or as a main with rice. It’s vegetarian and a snap to put together.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 1 bunch fresh cilantro, stems removed and leaves minced
  • 2 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • 1 (14 ounce) can tomato sauce
  • 1 (15 ounce) can red beans, drained and rinsed
  • salt and ground black pepper to taste
