Chef John’s Garlic and Ginger Bok Choy

Bok choy is a great vegetable for many reasons; it’s cheap, it takes about 3 minutes to cook, it has a beautiful subtle sweet flavor, and of course it’s packed with nutritional goodness.

Ingredients

  • 3 small heads bok choy, chopped
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 2 cloves garlic, chopped
  • 1 tablespoon grated fresh ginger
  • ½ teaspoon red pepper flakes (Optional)
  • 1 tablespoon soy sauce
  • 6 drops toasted sesame oil, or more to taste
