Quiche with Leeks, Mushrooms and Sweet Potatoes

Description

This easy crustless quiche is always a hit with the family. It’s vegetarian but satisfying for those meat-eaters too. Good for breakfast or any meal paired with soup and salad. It’s great as leftovers too.

Ingredients

  • 2 teaspoons olive oil
  • 1 onion, chopped
  • ½ teaspoon dried thyme
  • 2 leeks, white part only, chopped
  • 6 ounces mushrooms, chopped
  • ½ sweet potato, peeled and diced
  • 5 eggs
  • ⅓ cup sour cream
  • ½ teaspoon salt
  • 1 cup heavy whipping cream
  • 1 tablespoon finely shredded Asiago cheese
