Chicken Caesar Pasta Salad

Description

This is a favorite of ours in the summer. Also great made with shrimp in place of chicken!

Ingredients

  • 1 (16 ounce) box mini penne pasta
  • 1 ½ pounds chopped cooked chicken
  • ½ cup diced green bell pepper
  • 2 hard-boiled eggs, chopped
  • ⅓ cup grated Parmesan cheese
  • ⅓ cup chopped red onion
  • ½ (8 ounce) bottle creamy Caesar salad dressing, or to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil; add penne and cook
  2. stirring occasionally
  3. until tender yet firm to the bite
  4. about 7 minutes. Drain and rinse with cold water.
  5. Stir pasta
  6. chicken
  7. green bell pepper
  8. eggs
  9. Parmesan cheese
  10. and red onion together in a bowl. Pour salad dressing over the top and toss to coat. Cover the bowl with plastic wrap and refrigerate until chilled and flavors blend
  11. at least 2 hours.

Cook Time: 7 mins

Total Time: 2 hrs 27 mins
