Lentil Burgers

Description

Easy lentil veggie burger adapted from SILVERWOLF’s ‘Butter Bean Burgers.’ Additional vegetables may be added, as well as extra spices to enhance the flavor. You should also use whatever cheese you like.

Ingredients

  • 2 ½ cups cooked lentils
  • 1 small onion, diced
  • 1 egg, beaten
  • ¼ cup diced bell pepper
  • ⅛ cup Italian-seasoned bread crumbs
  • ⅓ cup shredded mozzarella cheese
  • 1 teaspoon olive oil-packed minced garlic
  • 1 pinch salt
  • 1 pinch ground black pepper
  • ¼ cup cornmeal, or as needed
  • 1 tablespoon olive oil

Instructions

  1. Pulse lentils in a food processor until coarsely ground; transfer to a large mixing bowl.
  2. Mix onion
  3. egg
  4. bell pepper
  5. and bread crumbs with the lentils; add mozzarella cheese
  6. garlic
  7. salt
  8. and pepper to the lentils and mix.
  9. Divide the mixture into four equally sized portions
  10. roll into balls
  11. and flatten into patties.
  12. Spread cornmeal into a wide
  13. shallow bowl. Dredge patties in cornmeal to coat.
  14. Heat olive oil in a wide skillet over medium-high heat. Cook patties in skillet until browned
  15. about 5 minutes per side.
