Real German Potato Salad (No Mayo)

Description

A much more traditional German potato salad which, of course, has no mayo. It has tangy, fresh flavors and can be served cold or at room temperature.

Ingredients

  • 10 red potatoes, peeled and roughly chopped, or more to taste
  • ½ cup chicken broth, or more as needed
  • ¼ cup white vinegar
  • ¼ cup oil
  • 1 large onion, diced
  • 6 slices cooked bacon, chopped (Optional)
  • ¼ cup chopped fresh dill
  • salt and ground black pepper to taste

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender
  2. 15 to 20 minutes; drain.
  3. Combine chicken broth
  4. vinegar
  5. and oil in a large pot; bring to a boil. Add onion to broth mixture; cook until onion is desired tenderness
  6. 2 to 6 minutes. Remove pot from heat and add potatoes
  7. bacon
  8. and dill; gently stir
  9. adding more chicken broth if needed to moisten salad. Season potato salad with salt and pepper.
