Salmon Croquettes

Description

Salmon croquettes are delicious and easy to fix. Great for a quick dinner and even cold on salad the next day!

Ingredients

  • 1 (6 ounce) can salmon, drained and flaked
  • 1 egg
  • ¼ cup finely chopped celery
  • ¼ cup sliced green onion
  • 1 tablespoon chopped fresh dill weed
  • ½ teaspoon garlic powder
  • ⅓ cup wheat germ
  • 3 tablespoons olive oil

Instructions

  1. In a medium bowl
  2. mix together the salmon
  3. egg
  4. celery
  5. green onion
  6. dill
  7. and garlic powder. Form the mixture into golf ball sized balls
  8. and roll in wheat germ to coat.
  9. Heat oil in a large skillet over medium heat. Flatten the balls slightly
  10. and fry for about 10 minutes
  11. turning as needed
  12. until golden brown.
