Garlic Parmesan Orange Roughy

Description

This is a quick, flavorful dish that looks gourmet. The spread works well with other mild white fish. Serve with your favorite vegetable and couscous for an easy weeknight meal.

Ingredients

  • 4 (4 ounce) fillets orange roughy
  • ½ lemon
  • ½ cup grated Parmesan cheese
  • ¼ cup butter, softened
  • ¼ cup prepared Dijon mustard mayonnaise blend
  • 1 large clove garlic, pressed
  • ¼ pinch salt
  • paprika

Instructions

  1. Preheat the oven’s broiler and set the oven rack about 6 inches from the heat source.
  2. Place fillets on the broiler pan and squeeze lemon over fillets.
  3. Broil in the preheated oven for 6 to 8 minutes.
  4. Combine Parmesan

  6. Dijionnaise
  7. garlic
  8. and salt in a small bowl. Spread Parmesan mixture on top of fillets. Sprinkle with paprika.
  9. Broil until topping is lightly browned and fish flakes easily with a fork
  10. about 3 minutes.
