Blue Cheese Potato Salad

Description

This is a delicious zesty potato salad.

Ingredients

  • 4 slices bacon
  • 2 pounds red new potatoes
  • ½ cup olive oil
  • 3 tablespoons white vinegar
  • 1 bunch green onions, chopped
  • ½ teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 ½ ounces blue cheese, crumbled

Instructions

  1. Place bacon in a large
  2. deep skillet. Cook over medium high heat until evenly brown. Drain
  3. crumble and set aside.
  4. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm
  5. about 15 minutes. Drain
  6. cool and chop. leaving skins on.
  7. In a large bowl
  8. whisk together the oil
  9. vinegar
  10. green onions
  11. salt and pepper. Add the potatoes
  12. bacon and cheese and toss to coat.
