Cilantro Edamame Hummus

Description

Traditionally made with chickpeas, this hummus has a new twist using shelled edamame. Serve with pita chips or celery sticks.

Ingredients

  • 1 (12 ounce) package frozen shelled edamame (green soybeans)
  • 2 cloves garlic
  • ½ cup tahini
  • ½ cup water
  • ½ cup packed cilantro leaves
  • ¼ cup lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground cumin
  • ⅛ teaspoon cayenne pepper

Instructions

  1. Place edamame into a large pot and cover with salted water. Place over medium-low heat
  2. bring to a simmer
  3. and cook until tender
  4. about 5 minutes; drain.
  5. Puree garlic in food processor until minced. Add edamame
  6. tahini
  7. water
  8. cilantro
  9. lemon juice
  10. olive oil
  11. kosher salt
  12. cumin
  13. and cayenne pepper; blend until smooth.
