Sweet Rhubarb Crisp

Rhubarb can be sweet!

Ingredients

  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • ¾ cup old-fashioned oats
  • ½ cup butter, melted
  • 1 teaspoon ground cinnamon
  • 4 cups chopped rhubarb
  • 1 cup water
  • 1 cup white sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix flour
  3. brown sugar
  4. oats
  5. butter
  6. and cinnamon together in a bowl until crumbly; press into the bottom of a 9-inch square baking dish. Spread rhubarb in an even layer over the crust.
  7. Stir water
  8. sugar
  9. cornstarch
  10. and vanilla extract together in a saucepan over medium low heat; cook
  11. stirring occasionally
  12. until thick and clear
  13. 5 to 10 minutes. Drizzle sauce over rhubarb.
  14. Bake in preheated oven until topping is set
  15. about 1 hour.
