Whole Earth Kale Salad

Description

This is an awesome way to use kale in a delicious salad.

Ingredients

  • 2 cups brown rice
  • 4 cups water
  • 1 (16 ounce) package extra firm tofu, diced
  • ¾ cup tamari almonds
  • ¼ cup sesame seeds
  • 1 bunch kale, ribs removed, chopped
  • ½ large head red cabbage, chopped
  • 1 cup shredded carrot
  • 1 cup chopped fresh flat-leaf parsley
  • ½ cup chopped fresh dill
  • ½ cup lemon juice
  • ½ cup tamari soy sauce
  • 2 tablespoons extra-virgin olive oil
  • 8 cloves garlic, chopped
  • ¼ cup stone-ground mustard
  • salt and ground black pepper to taste
