Easy Buckeye Bars

Description

The traditional Ohio treat now made easier in bar form.

Ingredients

  • 2 ½ cups confectioners’ sugar
  • 2 cups creamy peanut butter
  • ½ cup melted margarine
  • ½ cup brown sugar
  • ½ teaspoon vanilla extract
  • 1 (12 ounce) bag chocolate chips

Instructions

  1. Grease a 10×15-inch jelly roll pan.
  2. Mix confectioners’ sugar
  3. peanut butter
  4. margarine
  5. brown sugar
  6. and vanilla together in a bowl. Press peanut butter mixture into the prepared pan.
  7. Melt chocolate chips in the top of a double boiler over simmering water
  8. stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  9. Pour melted chocolate evenly over the peanut butter layer. Let buckeye bars cool completely before cutting into squares.
